Japanís Take on Christmas Cake

Say ďChristmas cakeĒ in the U.K. and most people will think of something very specific: a dense, rich fruit cake, seeped with brandy and generously spiced. Yes, itís covered in marzipan and icing, and maybe itís wrapped in a festive ribbon; there might even be a Santa on top. But itís the cake recipe thatís key. In other words, not every cake eaten at Christmas is a Christmas cake. This is not the case in Japan, where every cake eaten on and around Christmas is, or at least has the potential to be, a Christmas cake. Unseasonal strawberries on top of fluffy sponge cake, topped with whipped cream and sugar Santas? The final decorative flourish is what makes it a Christmas cake. Itís quite a different take to the tradition here in the U.K.

Stock up for the Season at Taste of Christmas

Taste of ChristmasTaste of Christmas, a wintry wonderland of festive foods, is returning to ExCel London from December 3 to 5 2010. The Christmas edition of the popular summertime foodie festival Taste of London, Taste of Christmas is the perfect place to stock up on indulgent treats for the end of the year, with a boutique food market, new product showcases, top chefs with top tips, and pop-up eateries by some of London's very best restaurants. In 2009, the event attracted over 28,000 visitors over two days, and more than 200 top food and drink producers. This year, CHOYA Umeshu will be exhibiting at Stand No. 454 as Wine And Spirit International Ltd. (CHOYA Umeshu). This is the second year they have been in attendance, and they will be selling three varieties of umeshu, or Japanese apricot liqueur, all in 700ml bottles: Extra Shiso, Royal Honey and Extra Years.

Michelin-starred Umu Appoints New Head Chef

Umu chefUmu, the Michelin-starred kaiseki restaurant in London's Mayfair, has appointed Yoshinori Ishii as its new Executive Chef. Ishii takes the helm from Ichiro Kubota, who was Head Chef since Umu's opening in 2004. Ishii trained for nine years in the three-Michelin-starred Kyoto Kitcho in Japan, then became Head Chef at the Japanese Embassy for the United Nations, first in Geneva and then in New York. He moved on to Morimoto in New York, where he was awarded StarChefs.com ĎRising Star Chef' award in 2008. As well as almost twenty years of cooking experience, Ishii brings to Umu his expertise in the tea ceremony, traditional flower arranging, antiquity and Zen Buddhism.

Japanese Whisky Industry Triumphs at ISC 2010

ISCThe International Spirits Challenge is the spirits industry's leading tasting event, where outstanding products from around the world are judged by industry experts, with the results providing buyers and restaurateurs with an important resource in selecting quality products. Held annually in Great Britain, this was the fifteenth ISC. In addition to the whisky category, it features brandy, rum, white spirits, and liqueur categories. Judging is carried out by blind taste testing, and Gold Medal winners are then re-tasted to determine trophy winners.

Sake Navigator and Certified Sake Sommelier Courses Held in London

The Sake Sommelier Association is a non profit organisation dedicated to the promotion of greater understanding and appreciation of Japanese sake. The Association now offers sake courses for professionals in the drinks industry and interested individuals, the Sake Navigator Course and Certified Sake Sommelier Course. Both courses were recently held in London, for the second time in the U.K., and Eat-Japan was there to see how  the SSA is working to introduce the U.K.'s drinks industry professionals to Japan's best-known drinks export. ďWe want to spark greater interest in sake in the U.K.Ē, says Kumiko Ohta, Director of Isake, holder of the Higher Certificate in Sake Education and Sake Sommelier Institute Kikasake-shi qualification, organiser of the courses. ďAnd to educate people, so that they'll start to spread the word. That's one of the main objectives of these courses. We're dedicated to showing the drinks industry in the U.K. just how delicious and versatile a beverage sake isĒ.

HYPER JAPAN London 2010 Welcomes 12,000+ Japan Fans

Event imageHYPER JAPAN London 2010 , a brand new B2C2B event focusing on Japanese cuisine and culture, was held at The Old Truman Brewery in London's trend-setting Brick Lane on October 1-3, welcoming over 12,000 visitors, including many trade professionals, through its doors. HYPER JAPAN London 2010 featured over 50 exhibitors, several exhibiting in the UK for the first time, showcasing the very best of modern Japan's food, drink, culture and entertainment. The HYPER JAPAN stage programme included food demonstrations by Kikkoman and Clearspring and a well -attended sake seminar, as well as anime and fashion-based shows. The event was supported by the Embassy of Japan in the UK, the Japan External Trade Organization (JETRO) , the Japan National Tourism Organization (JNTO) and the Japan Foundation, as well as the Association of Japanese Animations and the Visual Industry Promotion Organization.
