Dashi is commonly made by heating katsuobushi (dried bonito flakes), konbu (kelp), shiitake mushroom or iriko (sardine) and draining off the resultant broth. It is used for flavouring dishes such as soups, nabe (hot pots), sauces and rice dishes.
